Provenance is very important to the business and the fish the kitchen serves can be traced back to the fishermen who caught it, their boat and where it was landed. Fish 'n' chips


England's most famed street food is, of course, fish 'n' chips, which can range from flaky cod lightly fried with meaty chips (french fries) to unidentifiable, chewy fish-like substance fried with the scales still on until it's dripping with oil (let's not get into some of the horrible chips).

The fish—flour battered and deep fried—is usually cod or haddock (food regs from 2003 guanrantee you will know), but someotime skate, plaice, ray, or anotehr white fish is offered.

4. Micky's Chippy

There are more famous fish and chip restaurants in east London, but in the spirit of local chippies, Dalston residents could do worse than Micky’s Chippy on Pellerin Road, a neighbourhood fixture that has been serving the community for 25 years. Having changed hands somewhat back in 2018, the team has stayed on and the quality hasn’t dipped. The fish is fried to order, the oil clean, the mushy peas their proper, unnatural hue, the saveloy skins so taut they could take an eye out, the curry sauce correct, the banter on point (and also sometimes in Greek and Turkish.) Is it the best fish and chips in the world, or even in London? No, but it is competitive with many more famous names in east London, gets the spirit right, and does so for £8.90.


Recipe Summary

  • 4 large potatoes, peeled and cut into strips
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 cup milk
  • 1 egg
  • 1 quart vegetable oil for frying
  • 1 ½ pounds cod fillets

Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg stir until the mixture is smooth. Let mixture stand for 20 minutes.

Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).

Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.

Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.

Fry the potatoes again for 1 to 2 minutes for added crispness.


Top tips

If you don't have a thermometer, drop a bit of batter or end of a chip in and see if it sizzles to the surface.

8. Add the fizzy beer or fizzy water to your batter and gently mix it. It should have the consistency of pouring cream or yogurt. If it is too thick, add a little of your fizzy liquid.

9. Increase your oil heat to 180C / 350F ready for the fish. Place a few sheets of kitchen paper in your baking tray.

We will use this to place the fish once it's cooked.

10. We will cook 1 or 2 pieces of fish at a time, depends on the size of your pan/fryer.

Taking the end of a piece of fish, place it in the batter and coat it well.

Take it out of the batter and leave the excess to drip off, say for about 5 seconds.

Then gently place it in the hot oil, and cook for 7 - 8 minutes until it becomes crispy and golden brown just like in the photos below.

If the batter starts going brown too quickly, turn the temperature down a little.

11. Place on the kitchen paper then keep warm in the oven, whilst you cook the other pieces of fish the same way and add to the oven.

12. When you've finished cooking the fish, scoop out any bits of batter floating in the pan/fryer.

In Britain, these bits are known as 'scraps' and you can often get them for free from the chippy to eat with chips. Not very healthy though!

13. Return the chips back to the fryer and cook for 3 minutes until they are brown and crispy.

When done, drain off the excess oil (I use kitchen paper), and arrange, together with the fish on your newspaper & greaseproof paper like in the photos below.

Serve whilst still hot and crispy. Sprinkle some salt and shake some vinegar on your fish and chips and eat out of the paper with your fingers and ENJOY!

Mooshies, Spitalfields

This one's a bit of a cheeky entry, as technically Mooshies doesn't serve regular fish and chips. Instead it's all about (vegan) burgers here, one of which is a fish imitator. The Phillet-Om-Phish contains panko fried aubergine, tartar sauce, nori seaweed and lettuce. The aubergine isn't the best fish substitute — and the whole thing is rather messy, with oil dripping everywhere — but the burger as a whole comes together. Enjoyed along side some fries — standard, sweet potato, or (vegan) cheesy — and this is a thoroughly 21st century portion of fish and chips.
