Kirde (cheese pie)


Knead the coca if you leave it to rise.

After the crust has risen, it is divided into larger balls and stretched with a rolling pin. The sheets should be thicker. Put the crushed cheese (we can add to the cheese and chopped dill) on the length of the sheet and roll and then cut into pieces and place next to each other in a pan greased with oil. Leave the rolls to rise a little and in the meantime prepare the sauce.

Mix an egg with yogurt and sour cream, add a little salt and pour the composition over the dough. Put the tray in the oven and let the pie bake until it browns.

Serve hot.


Kirde (cheese pie) - Recipes


-2 puff pastry sheets
(I made a dough at home)
-1 kg of potatoes
-500 gr sour cream
-4-5 cloves of garlic
-1-2 eggs
-a half teaspoon of nutmeg
-a bunch of parsley
-o delicate spoonful
-salt and pepper


We boil the washed potatoes in their skins.
After they have cooled, we clean them and cut them into thinner slices.
Put the sour cream in a bowl, add the finely chopped parsley, salt, pepper, nutmeg and delicately, mix everything and set aside.



We are preparing a dish that we can put in the oven.
Grease the bowl with butter and line it with a sheet of dough.



over the dough we will put a row of potato slices, then we will put the cream, another row
of potatoes, sour cream again until done.



Cover with the second sheet of dough and glue the edges together.
Grease the pie with beaten egg and put in the preheated oven for about 40 minutes.
Serve hot with a cabbage salad, in my case, or any salad we like.


Challenge 5: Broccoli pie, Romanian cauliflower and 3 kinds of cheese

I insist, I cry, I crawl under the seats, I resort to threats to get her out of the car if she doesn't give me behind-the-scenes details. I found out. The proposal broccoli with cream and breadcrumbs it was a ridiculous one, meant to make me react bleah-type and choose another dish. Muahahahahaha! Laughter can't believe it.

July 2 & # 8211 The fun persists even after the reprimand of colleagues who make anti-season proposals, again. Brother, these women don't mind! And yes, yes, i know, i & # 8217m one of them! Went to Kaufland and, well & # 8230 found the heaven of things you rarely see. Bought beautiful and tasty broccoli, romanesco cauliflower (. And at 4.5 lei a piece. So. again) and graffiti eggplant. Arriving home with the sarsanalele, he immediately grabbed a lightning cooking session.

For those who do not feel like reading the story that led to the wonder below, here are the details of the recipe: a large bouquet of broccoli it is cleaned, washed and unwrapped in foil. I removed the woody part of the stem but kept what was fragile and cut it into rounds which I boiled in salt water. I left them for about 3-4 minutes, until they softened a bit, then I put the broccoli florets for another 2 minutes. Be very careful, do not boil more because they will be cooked in the oven as well! Along with the broccoli stalk slices I put and 4 large Romanesque cauliflower florets. Otherwise, you can replace it with more classic broccoli or cauliflower. I liked the combination of green colors.

ROOKIE & # 8217S TIPS: you can use other types of extra vegetables: peas, zucchini, corn, peppers, green or yellow fidelity beans & # 8211 all for a colorful pie!

Separately, I put in a thick-bottomed pot 3 large tablespoons of cream with 30% fat and 100 grams of cheese with blue mold, cut into small cubes. I placed the pan on a small fig and stirred until the cheese melted and a delicious sauce formed. It takes a few minutes. I strained the vegetables and chopped them finely. I tossed them into the large bowl in which I added the cream sauce, 100 grams of cheese, 100 grams of fresh goat's milk, 1/2 teaspoon grated Himalayan salt and a pinch of white pepper. Mixed.

In a heat-resistant dish (I have a silicone cake tin with a diameter of 24 cm) greased with very little butter I put 2 thin sheets of pie (not to be confused with puff pastry). Perpendicular to each other (they have rectangular shapes and I wanted the protruding edges to be the same size). I didn't consider it necessary to grease them with melted butter or oil, the caloric intake is not worth it. You don't have to take me into account at this stage, in fact, you can use several sheets. I molded the sheets with my fingers on the shape of the bowl, I placed the composition of vegetables with cheese and I leveled it nicely. I knocked an egg and with the help of a brush, I muscleed each of the 8 edges that I turned towards the center of the pie. For extra crunchiness I put more on top another thin sheet of pie, placing it lightly in waves and then greased with egg. I baked for about 30 minutes ?! I don't remember, the idea is that it smelled nice and the crust was browned. At stage 2 and 180 degrees respectively.

How easy it is to make such a pie, with the dough bought, I feel a summer and an autumn full of such combinations with the most varied vegetables. Maybe one with cow's cheese and fruit, kind of like here.

Reasons why I sometimes buy comet sheets or puff pastry from the comet: lack of time to prepare / leaven the dough, the impossibility of obtaining it at home, with the utensils I have (I don't know exactly how I could get such thin sheets), the need for a very small quantity as was the case here, 3 thin sheets of pie instead of a dough for which I should have used & # 8230 how much? & # 8230. 50 grams of flour ?!). However, I rarely use them, a packet of pie sheets is enough for many rounds of recipes. I'm not talking about puff pastry, it's difficult to make, few chefs resort to its preparation because the technique is elaborate. Unfortunately, we don't have much quality puff pastry with butter instead of margarine. If you know any source / brand please share with me!


Pie with sweet cheese and raisins

Pie recipe with sweet cheese and raisins. If you like homemade cheesecakes, you must try this delicious pie with sweet cheese and raisins. It is very good and easy to make!

  • Crust:
  • 250 g flour
  • 100 g old powder
  • 125 g butter
  • 1 sachet of vanilla sugar
  • 1 or
  • Cheese filling:
  • 1 kg of creamy cottage cheese, in a bucket
  • 8 eggs
  • 100 g butter
  • 250 g sugar
  • 3 tablespoons sugar
  • 3 tablespoons cornstarch
  • 100 g raisins
  • Furthermore:

Crust:

In a bowl, mix the butter with the sugar and vanilla sugar.

Add the egg, then the flour and knead until you get a homogeneous dough.

Gently flatten the prepared dough, wrap it in plastic wrap and refrigerate for an hour.

After this time, take the dough out of the fridge.

Cut 1/3 of the dough and put it back in the fridge wrapped in plastic food foil.

From the 2/3 of the dough, spread a sheet equal to the size of the tray (25 x 35 cm).

Place the dough sheet in the tray lined with baking paper.

Bake in the preheated oven at 180 ° C for about 15 minutes, until lightly browned.

Cheese filling:

For the cheese filling, all the ingredients must be at room temperature.

In a bowl, mix the butter with the sugar and vanilla sugar.

Incorporate eggs, cottage cheese and finally starch and raisins.

Distribute the cheese filling evenly over the crust.

Take the rest of the dough out of the fridge and spread it out on a thin sheet.

Cut the dough into thin strips about 1 cm wide and place them over the cheese filling.

Grease the dough strips with an egg yolk.

Bake the pie for 50-60 minutes at 170 & deg C.

When it cools, decorate with powdered sugar.

Copycat Panera Broccoli Cheddar Soup is the winner regardless of the time of year

How many times have you hit the drive-through window or since the beginning of the pandemic? Don't worry, no judgment here! Food has become even more of a comfort in the last few months, and supporting the restaurant industry is something close and dear to my heart. We've definitely gotten rid of the game since it all started. However, I am still a budget girl, so being able to cook some of our home restaurant preferences is definitely a must! This Copycat Panera Broccoli Cheddar Soup it has quickly become a table I turn to regularly, as it can be on the table almost as fast as navigating the route line.


Dough dough with butter

Good found! This tender dough with butter is so good and versatile that it is the dough I use for most pies, a simple and easy recipe to make.

You just need to follow the steps strictly and not knead too much, so as not to develop gluten, not the other way around, but it will not be fragile, but hard.

We prepare the wet ingredients in another bowl, we put the cream, the eggs and we put them in the fridge.
After half an hour, remove the bowl with the flour and butter, and press the pieces of butter with your fingertips so as to obtain thin "sheets" of butter.

Add the wet ingredients, vanilla sugar and salt and mix gently. We put it in the cold again.

That's what it should look like.


For the pie, divide the dough in two, spread the first sheet the size of the tray on a work surface sprinkled with flour. As you can see, there are pieces of butter left and it has to stay that way, that's no problem, because it will make it fragile. Put it in a tray, put the composition and distribute it evenly, and on top the other half of the dough spread to the same size. Push with a fork from place to place and bake for 45-50 minutes at 180 degrees and take on a reddish color. Be very careful, you must work quickly with this dough and be as cool as possible in the room.

For the salt, spread the dough with a thickness of 5-6 millimeters, slice, grease with egg, sprinkle with telemea or seeds and bake for 20-25 minutes at 180 degrees.

Salted with salted cheese

Fast, cheap and tasty. I go great with a glass of cold beer. I highly recommend the recipe!

  • 500 g flour
  • 200 ml borscht or mineral water (approximately)
  • 125 ml melted and cooled lard (I measured it with a graduated glass) or 175 g greasy butter
  • 100 g salted telemea
  • an egg
  • 25 g fresh yeast
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt or to taste
  • an egg for anointing
  • poppy seeds


Method of preparation:
Rub / mix the yeast with the sugar and let it soften / activate for about 10 minutes.
Sift the flour into a bowl and make a hole in the middle of it. Add the grated cheese with small holes, an egg, yeast, melted and cooled lard and salt. We start kneading by gradually adding the borscht (mineral water) until we get a suitable hard dough that no longer sticks to the hands. Let the dough rest for a quarter of an hour.
Turn the oven to medium heat (180 & # 176C).
Divide the dough into two equal parts. On the floured worktop, spread (one by one) each piece of dough in a sheet about 3-4 mm thick. Using a serrated roll, cut strips of dough 1.5 cm wide. Cut the strips in half, place them in the tray leaving the distance between them, then grease them with beaten egg and sprinkle with poppy seeds. Put the tray in the oven for 15-20 minutes or until the salads are lightly browned. Simple and very good!

Mix all the ingredients for the basic dough and work it until it becomes homogeneous and smooth. Put in the fridge to rest for 1 hour. Roll out the dough into two sheets (about 0.5 cm thick) no larger than 30/24 cm. Put the first in the pan lined with baking paper, place the apple filling on top and then the other puff pastry. Close the edges, punch holes with the fork and brush the egg (optional) all over the surface.
Filling:
Grate the apples and mix with the sugar, cinnamon and breadcrumbs.
If you like it sweeter, add the sugar.
After you have filled the two sheets, put the cake in the preheated oven, at a medium temperature, until golden.
Leave to cool, sprinkle with vanilla icing sugar and cut into squares.

Different types of filling I make:
* salted cheese - grated quartirolo cheese (also mixed with half a grain) mixed with 1 egg.
* sweet cheese - sweet ricotta cheese with sugar, grated lemon peel, raisins, vanillin
* pumpkin pulp already baked in the oven, mixed with sugar, vanillin and a little breadcrumbs.
* with meat ragout without tomato sauce. only fried with minced beef or mixed pork, cooked over medium heat. until the meat is ready. Add a little at a time of the broth. In the end it should be drier and when it is cold mixed with the egg, a little cooking cream and grated grain.


Viennese pie with sweet cottage cheese

Venetian pie recipe with sweet cottage cheese. A simple cake with cottage cheese, extremely fragrant and delicious. It is easy to prepare, from a few ingredients.

  • 1 kg of sweet cottage cheese
  • 300 g sugar
  • 8 eggs
  • 200 g butter
  • vanilla essence
  • a pinch of salt
  • powdered sugar for decoration (optional)

All ingredients must be at room temperature.

Separate the yolks from the whites.

In a bowl, mix the butter with the sugar and yolks.

Gradually add the cottage cheese and vanilla essence.

Separately, mix the egg whites with a pinch of salt.

Incorporate the egg white meringue into the cheese composition.

Pour the composition obtained in a tray lined with baking paper measuring 20 x 28 cm.

Bake the pie in the preheated oven at 175 ° C for one hour.

When ready, leave the oven door open for another 30 minutes, then remove the pie.

Optionally sprinkle with powdered sugar on top.

The common pie with cheese and raisins

Cake with cow and raisin cheese,
like at my mother's house


A pie that is prepared at maximum speed:
- a pack of commercial pie sheets
- 6 eggs plus one to grease on top
- one kilogram of fresh cottage cheese, neither too soft nor too coagulated
- vanilla
- Raisins, as you like
- sugar and salt to taste.

The pie sheets are removed from the freezer about half an hour before, to thaw. They are then carefully unwrapped on the foil in which they were folded. Use 3-4 sheets for a pie roll. You get 4 rolls, as for a regular rectangular tray.

Mix the cottage cheese with the eggs, raisins, sugar, salt, vanilla (if you like, you can also add coconut or chopped walnuts) - and if the paste is too soft, add a handful of semolina. then it is divided into four, for the four rolls.
Spread on the stack of pie sheets as for a roll, peel off the first 3 or 4 sheets (count them all and appreciate how many to use) and roll. Then place the first roll in the oiled pan. Do the same for the following. Sprinkle a little more oil on top and put in the preheated oven over medium heat. Bake in about 45 minutes (depending on the oven you have). Towards the end, remove the tray, grease the pie on top with a well-rubbed egg with a little cream and sprinkle with caster sugar. Bake for another 5-10 minutes.
It is very tasty hot, but also chilled.
