Cheese and caramel mousse cake


Rock:

I mixed the egg whites with a pinch of salt and water.

I added the sugar and continued to mix until I got a strong meringue.

Over the meringue I added the oil, yolks and vanilla.

I mixed the flour with the baking powder.

I added flour in 2-3 tranches over the egg whites, mixing lightly with a spatula.

I lined the tray with baking paper and baked the top in the preheated oven for 15-18 minutes (toothpick test)

I let the countertop cool.

On a plate I put the countertop and around the countertop I put a detachable ring.

I melted the chocolate with liquid cream and greased the top with it.

I put the chocolate top in the fridge until the chocolate hardened.

Cheese mousse:

I mixed the cream cheese with the sugar and vanilla.

I hydrated the gelatin in cold water for 5 minutes.

I mixed the cream with the liquid cream until it got the consistency (not very hard)

I melted the gelatin (be careful not to boil it) and added it over the cheese.

I added the whipped cream over the cream cheese, stirring lightly until I got a fluffy cream.

I spread the cheese mouse over the chocolate and let it cool until I prepared the caramel.

Caramel:

In a saucepan I put water with sugar and vanilla sugar to simmer until the sugar is caramelized.

I took it off the heat, added the butter and cream, stirring vigorously.

I let the caramel cool then I put it over the cream cheese.

I sprinkled some chopped hazelnuts and refrigerated for at least 3-4 hours.

This is a super simple recipe for an absolutely delicious cake! Few ingredients, easy to make, ready immediately. And you can use all kinds of fruit, depending on the season, or in winter you can even replace the fruit with a jar of jam.

It's not really a tart, you make it in a tray and cut it into cubes, but it seems to me that it looks like a tart.

In the pictures below there are 2 cakes: one with blackberries and one with plums. It goes with almost any berry, plum, cherry, apricot, etc. Be a little juicy

That's one of the reasons I like this cake. It's super easy to do.

Put the flour, sugar, salt, baking powder and diced cold butter in the food processor. It pulsates until the texture of a fine sand is obtained. Then put the egg and beat a few more times until the composition is homogeneous and begins to gather in the form of lumps. If you use 1 egg, smaller lumps are formed and the dough has a finer granulation (the blackberry version here). If you use 2 eggs, squeeze the dough more into the ball cheese, it is more compact (plum version).

A tray, preferably with a detachable edge, is lined with baking paper. It can be greased with only oil, but I like baking paper. It makes your life a lot easier. About 2 thirds of the dough to put in the tray and stretch and level by hand, to cover the entire bottom of the tray evenly,

The fruits (whole, if smaller, or diced, if larger) are mixed with starch, sugar and lemon juice. In the picture above the lemon was not present :)).

Pour the fruit over the base of the cake and sprinkle or grate the remaining dough on top (hence the name of the cake). In the version with 1 egg, sprinkle, in the version with 2 eggs, crush pieces of dough on top of the fruit or the dough in foil, leave it in the freezer for 30 minutes and then grate it over the fruit, on a large grater.

This is one of the simplest cake recipes, for which you don't need anything else, neither as ingredients, nor as utensils. Just a bowl and a spatula :). And it goes with other fruits, not just plums. It goes very well with apricots or cherries. It is a denser cake, not fluffy like a pandispan, but super quick to make and delicious. It hardens quite quickly, so I say eat it in a maximum of 2 days :)

Here we end in 2 words :). All dry ingredients are mixed in a larger bowl, all wet ingredients are mixed in a smaller bowl. Pour the wet ones over the dry ones and mix lightly with a spatula only until smooth.

Pour the composition into a tray lined with baking paper (keep in mind that it will not grow much, so it must be a thick layer), place the fruit on top and bake in the preheated oven at 180 gr C for about 35 degrees. minutes.
