Roll the cheese disks through flour, then egg white, breadcrumbs and again egg white and breadcrumbs.
Place in a tray that is placed in the preheated oven at 200 degrees Celsius for 10-15 minutes, turning them on the other side about half the time.
Cut all the vegetables, place in a bowl and sprinkle with flax seeds.
Mix the olive oil with the lemon juice, salt and pepper and pour over the salad.
Place the discs of breaded cheese on top.
It is consumed immediately.
