A very easy date and walnut cake that serves 12. Try garnishing the cake with walnut halves before baking so that each square has a walnut in the centre when cut!

  • 1 teaspoon bicarbonate of soda
  • 225g butter
  • 200g caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 200g plain flour

  • 120g chopped walnuts

  1. Preheat oven to 180 C / Gas 4. Lightly grease a 22x33cm tin. In a saucepan, combine dates, boiling water and bicarb. Let stand while mixing the cake mixture.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour, baking powder and chopped walnuts. Stir in the date mixture. Pour cake mixture into prepared tin.
  3. Bake in the preheated oven for 50 to 60 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.

I have a similar recipe, but mine uses only 1 cup of chopped dates. Also, I put 1/2 c choc chips in the batter, and sprinkled 1/2 c on top - mine was delish! Maybe the author really means 1 cup of dates? (1 lb = 2-1/2 cups pitted dates). But I have to give this 5* because it is so good!-25 Feb 2004

I made this recipe 3 days ago and the only difference was I used brown sugar instead of white. This cake came out alot browner but the texture and taste was amazing. I also didn't have the same amount of dates so used less (about 250gm). Cooked it for 50min on 180o. Recipe Summary

Preheat the oven to 325 degrees F (165 degrees C). Line a 2-pound loaf pan with parchment paper.

Combine flour, brown sugar, and walnuts in a separate bowl. Add to bowl with the date mixture. Mix well with a wooden spoon. Add egg and mix in. Spoon mixture into the prepared pan.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 75 minutes. Let cool on a wire rack.

This cake freezes very well and a batch can be made in advance.

I have found this recipe is perfect when used with a metal loaf tin, rather than a silicone one. As silicone loaf tins can sometimes lose shape and the cake mixture may spill out over the sides.

I much prefer to use the loaf pan liners that are readily available from supermarkets, dollar stores, and kitchen specialists' shops. I've purchased from different shops and all have been the same excellent quality, the only difference has been the cost!

Instructions

1. Preheat oven to 160 C, 325 F. Grease and lightly flour two 8 inch or 20 cm loose-bottomed round cake tins. I always like to place a disc of parchment in the base of each tin so the cake comes out very easily. You can also use our easy pan release recipe if you don't have any parchment paper.

2. Sift flour, salt and baking powder. Chop the walnuts. Make sure the pieces are NO LARGER than pea size. Any bigger and they will sink to the bottom during baking.

3. Lightly beat eggs and add vanilla in a bowl. In a mixing bowl, cream butter and sugar until light and fluffy.
** NOTE: Creaming the butter and sugar is VERY important to get a fluffy texture to the cake crumb. Please make sure you use your mixer and cream until you see the color of the butter turn almost white. It will take you around 5 - 7 minutes for this to happen, and it is worth the extra time taken!

4. Add egg mixture, a little at a time to the batter. Then add half the flour, then milk, then the rest of flour. Add the walnuts and make sure they are well combined and distributed.

5. Transfer the cake batter mixture equally into the 2 baking tins and bake 30 - 35 mins or until a skewer comes out clean. If using a loaf pan, keep the same temperature, and bake for about 1 hour to 1 hr 10 minutes. Again, check for doneness.

6. . Allow the cakes to rest for 2 minutes then remove from pans and place UPSIDE DOWN on a cooling rack. Allow to COMPLETELY cool before frosting.
*** Please note, bake times will vary slightly so please check for doneness after 25 - 30 minutes of baking.

For the Buttercream Frosting

7. Add the softened butter (it MUST be softened) vanilla and powdered sugar to a mixing bowl and start by using a wooden spoon to combine.

If you start with an electric mixer the powdered sugar will fly everywhere!! Once combined, use a mixer and beat the butter, sugar and vanilla until you see an almost white colour and the mixture is fluffy.

At this point, taste the buttercream for sweetness. If you want more, just add some more powdered sugar, a tablespoon at a time until it is to your liking.

8. When the cakes have COMPLETELY cooled, place the first cake on the plate, then take some frosting and spread evenly over the top. Then add the second cake on top and continue to frost all over the cake, or how you like.

You can simply spread the frosting or use a piping bag if you would like a pretty pattern. You choose!

Carbs

Starchy foods like bread, breakfast cereals or potatoes are a good source of carbohydrate and should make up just over a third of the food you eat. When eaten, carbohydrates are broken down into glucose, which is used to fuel cells in your body like brain and muscle cells. Some people think starchy carbohydrates are fattening, but gram for gram it contains less than half the calories of fat. Choose whole grain or high fibre varieties where you can as they often contain more nutrients.

Sugars

On average in the UK we eat too much sugar. Foods and drinks high in sugars are not needed in the diet. So if you have them, make sure they're infrequent and in small amounts, or you risk tooth decay or obesity.

Fibre

Fibre is classed as a carbohydrate and you should aim to eat 30g fibre each day. Eating plenty of fibre is good for your digestive health and is associated with a lower risk of heart disease, stroke, type 2 diabetes and some cancers.

  • Preheat the oven to 350F and line a baking pan with parchment paper.
  • If using deglet nour dates, soak them in hot water for 20 minutes. Drain and then chop the dates into small pieces. If using medjool dates, skip the soaking and simply chop them.
  • Cream butter and sugar in a large bowl followed by the eggs.
  • Mix in all purpose flour, baking powder and baking soda and finish by folding in chopped dates and walnuts.
  • Transfer the batter into the baking pan and bake until the tester comes out clean. Cool the cake completely before slicing since this cake is loaded with ingredients and falls apart if sliced before cooling.

Holidays

The year came to an end with spending Thanksgiving with my husband’s side of the family, and Christmas with my side of the family. It was so nice to be home for Christmas and seeing all my family and friends. I even had a chance to stay in New York City, and it was magical. The streets I once used to roam and took for granted, I no longer do.


Iced Date & Walnut Cake Recipe

Grease a 18 - 20 cm (7 - 8 inch) cake tin with a loose base.

Pre-heat the oven to 180°C (350°F or gas mark 4 or 160°C fan oven).

In a small bowl or jug add the boiling water to the dates. Add the bicarbonate of soda and butter as well, then stir until the butter has melted.

In a large bowl beat the egg. Then add the sugar and beat again.

When the date mixture has cooled (is warm rather than hot), add to the egg and sugar mixture. Sift in the flour and spices, and add all the other ingredients. Mix well.

Pour the mixture into the tin, ensuring it spreads to the sides evenly.

Bake in the oven for about 1 - 1 1/4 hours. When cooked you should be able to insert a skewer into the centre of the cake and it should come out clean. If the end is sticky, then the cake needs more time baking.

When the cake is cooked, leave it to cool in the tin for a few minutes before turning out onto a wire rack.

When the cake has cooled, mix all the icing ingredients together in a small bowl.

Place an upturned tea plate on a dinner plate (or on a surface you don't mind getting icing on). Then place the cake on the upturned plate. Pour the icing on top of the cake and let it dribble down the sides.

If you don't like waste (like me), you can scrape up the icing that dribbles off the cake and add it back on the top.
