Bean stew with ladder


An absolutely delicious and quite cheap recipe is the one for iahnie.

  • 300 gr dried white beans
  • 1 preserve red beans
  • 200 gr smoked pork ladder
  • 5 tablespoons tomato sauce
  • 1 onion
  • salt
  • thyme
  • parsley

RECIPE PREPARATION Bean stew with ladder:

I put the white beans in the water the night before. The next day I changed the water and boiled it. After a few boils I changed the water again, repeating the operation 2-3 times.

When the white beans have boiled, add the red beans, cut the ladder into pieces and mix well.

Then prepare the sauce.

I chopped an onion and put it to harden. When it browned I added the tomato sauce, salt, thyme and 3 tablespoons of water.

I added the sauce over the beans and left it on the fire for another 10-15 minutes.

At the end I put a little finely chopped parsley.

When it comes to bean stew, I can say that my father and grandmother made the best beans, no matter what kind it was, soup, stew or rubbed beans.

I remember that in our house, when beans were made, they had to take the big pot out of the pantry, one of about 15 liters :))) It was so funny, that every time I saw that red glazed pot, I knew what it follows.

Grandma comes from the Cluj area, from a mountain area with a few villages belonging to a commune, each village had a nickname, although I could not find out why they had this nickname, I deduced that it was food and I hope you are not wrong. Tomatoes, haystacks, hilibari, and all these nicknames are still used today.

This fasting bean stew was served with mashed fish (hot peppers) and was one of my favorites, from only a few simple and mundane ingredients, cooked slowly on the stove, the best bean dish came out.

Today I added some spices, celery root vegetables, carrots, parsnips and what came out, satisfied 6 people not really hungry.

The next day we wash the beans again and boil it in cold water in a large pot with at least 3 times its volume next to the vegetables. Depending on the type of beans will boil between 1 and 2-3 hours. Mine boiled in almost 2 hours. If the water from the beans decreases, without a gift and maybe we fill it with hot water, not from the tap, but one that has the temperature as close as possible to the one in which the beans are. This will not allow the beans to harden.

In a frying pan put the onion with the garlic, the finely chopped bell pepper and a little salt to harden over medium heat, stirring for 10 minutes from time to time so that they do not burn.

Add the tomatoes to the broth, paprika, spices and continue to sauté for another 2 minutes.

When the beans are almost cooked, add the onion, potato mixture and cook for another 20-25 minutes on low heat, checking the taste.


I've been soaking the beans since evening. The next day I threw away the water, rinsed them and boiled them. I changed 3 waters.


For the fourth I added: an onion, 2 carrots, a few cloves of garlic, 2 bay leaves and 1/2 teaspoon baking soda.


I let them boil well, well.


Separately, I cut 3 onions into small pieces and put them to fry.

When the onion has browned a little, I put broth (about 4-5 tablespoons).


When the beans were ready, I turned off the heat and added a few cloves of finely chopped garlic, salt, pepper and paprika.


Due to the lack of time, I made the beans in a blender, if you have the time and conditions to put it on the meat grinder: another consistency will have a different taste.


In order not to throw the onion oil with broth, I drained it in beans and mixed it well (you can put clean oil, you need a little) and I mixed a little of the onion with broth in the composition.


Put on the plate a healthy portion of yeast, on top of the onion with broth.


Baked beans. How is it prepared:

First of all, choose the beans, wash them and leave them to soak in cold water for a few hours. Or the best of the evening until the morning. Discard the water, cover the beans with another cold water and bring to the boil. Discard the water again and fill the pot with water (boiled in parallel, in another pot).

When the beans are boiling, boil the cleaned and cut pasta in half, carrots and whole onions are boiled over low heat for about an hour, then the whole vegetables are removed. Add other finely chopped vegetables (onions, bell peppers, carrots).

Among the traditional recipes that we enjoyed as a child with the whole family is this bean stew with ribs. The recipe is one with a low degree of difficulty, even if it requires minimal preparation the night before. And the secret to avoiding bloating is to change the boiling water several times. Ingredients for bean stew with ribs:

500 grams of beans
200 grams of smoked ribs
1-2 medium onions
1 bay leaf
1/2 bunch of dill
2 tablespoons extra virgin olive oil
1 tablespoon broth
sea ​​salt
freshly ground black pepper

4 steps to prepare bean stew with ribs:

1. The night before the meal, place the beans in a pot of water and soak them. The next day, change the water in which the beans were, add sea salt and bring to a boil. When it boils, change the water and repeat this process twice.

2. Meanwhile, peel and chop the onion. In a frying pan, heat a little oil and let the onion harden until it becomes copper. Allow the onion to cool slightly and heat a kettle with water.

3. After the beans have boiled, drain the water and add in a heat-resistant yena bowl, along with the hardened onions, broth and a little warm water, mixing well. The smoked ribs are cut into thin slices and browned in a little oil. Add this to the yena bowl, along with the bay leaf.

4. Place the dish in the oven at low to medium temperature and leave for 10-15 minutes to blend the flavors and all the ingredients are tender. Remove from the oven and garnish with fresh dill, if using. Serve with pickles.

Method of preparation

Heat the oil and flour as much as it contains (2-3 tablespoons, depending on how much sauce you want to make and how thick you want it to be). After frying a little flour, put 1 teaspoon of paprika in oil and quench with water in which he boiled the beans.

Then add the beans and boiled ribs, 2-3 pieces of crushed garlic and bring to the boil (about 5 minutes).

As we really like smoked ribs, we enriched the beans with them, but you can also add smoked ciolan or some good sausages. In the first case, treat the ciolan like ribs (that is, you have to boil it with beans, from the beginning). In the case of sausages, you have two options: put them together with onions or make simple beans and put the sausages, fried separately, over the beans, directly on the plate. Whatever you choose, being dry beans, do not forget that you have to leave it to soak, ideally in the evening.

After performing the water replacement operation twice more, put the beans together with the cut ribs. Cover with hot water (not to be more than a finger above the beans and ribs). Let it simmer for about an hour & a half, until the beans are almost cooked. In a saucepan, heat the oil and sauté the onion (sliced).

Place the beans and ribs over the hardened onion, along with the remaining water (its amount has decreased considerably during cooking). Add the bay leaf, thyme, tarragon, broth and a few black peppercorns. Bring to the boil, season with salt and simmer, simmer, for about 30 minutes, during which time the juice drops even more, turning into a sauce. If you don't want it on the stove, you can put the yeast to fall in the oven, on low to medium heat, for about 45-60 minutes (checking that it doesn't run out of juice).

1 piece of pork tenderloin
1 large onion
100 ml of tomato juice
1 teaspoon coriander berries
2 teaspoons smoked paprika
1/2 teaspoon thyme
2 tablespoons vegeta
1/4 teaspoon cumin
sea ​​salt
oil
Preparation time : 90 minutes

Step 1: Boil the beans. Change the water a few times. Let it boil until it is almost cooked, but not at all, so that it is not very soft.
Step 2: The pork tenderloin will be cut into pieces and placed in a bowl with a little oil, coriander seeds, smoked paprika and a little sea salt. You will leave it to marinate and you will boil it until the beans are almost ready.
Step 3: After chopping the onion, you will harden it. Then add the beans, tomato juice, vegeta, thyme and cumin. You will leave it on the fire, on low heat.
Step 4: The ladle will be fried on both sides.
Step 5: When the beans are ready, you will add the scab over it and leave it on the fire.
