In a bowl put 5 tablespoons of white composition, add cocoa and mix.

- 300 ml orange juice (I used a freshly squeezed juice that I passed through the sieve to separate the pulp from the juice)
- 100 ml water
- 200 g sugar
- 120 g cornstarch
Preheat the oven to 180 & degC. Wallpaper with butter and baking paper or non stick spray a classic 15x20cm open tray.
In a large bowl put flour, sugar, baking powder and cocoa. We mix with the target. We make the hole in the middle and pour the water and oil. Stir until we have a homogeneous, colorless composition.
Add the raspberry jam and mix.
Pour the composition into the tray and level well with a spatula. Bake for 35-45 minutes or until the cake is well baked and passes the toothpick test. It will be the best!

Vegan or fasting cake flavored with orange
Cozonac is one of the favorite traditional desserts. And if it's still almost winter, I flavored the dough as required. With lemon, vanilla, lots of orange, cranberries, raisins and even a little cinnamon. A fluffy wonder came out. I kept the filling classic. I prefer the cake filled with walnuts and cocoa or carob, that's how I've always liked it.
Ingredients for vegan or fasting cake flavored with orange:
- 1 kg of flour 000
- 35 gr of fresh yeast
- 200 g of sugar
- 1/2 teaspoon salt
- 1/4 teaspoon turmeric
- 1/2 teaspoon cinnamon
- The skin of a large organic orange
- The peel of an organic lemon
- 80 g of raisins
- 50 gr of cranberries
- 550 ml of warm vegetable milk
- 120 ml of oil
- 500 g of ground walnuts
- 30 g of cocoa or carob
- 200 g of brown sugar
- 160 ml of freshly squeezed orange juice or vegetable milk
- Vanilla / rom
First I sifted the flour, then I mixed it with sugar, salt, turmeric, cinnamon, orange peel and lemon, raisins and cranberries.
In a large cup I dissolved the yeast with a teaspoon of sugar. Over it I added 50 ml of the 550 ml of milk and let it rise for 15 minutes. I poured the yeast over the flour, I incorporated the vanilla and the milk, and at the end the oil. I kneaded the dough for about 10 minutes, then left it to rise for an hour.
As the dough grew, I mixed the ingredients and obtained the cream with which I filled the cakes.
After the dough doubled in volume, I divided it into 4 equal pieces. I greased the worktop and my hands with a little oil, I spread each piece and I greased it with walnut cream. I rolled tightly, then I braided two rolls each.
I added a few coconut flakes on top, then covered the cakes with foil and let them rise for another 20 minutes.
After this time I put them in the oven and baked them for about 50 minutes at 180 degrees Celsius.
When I took them out of the oven, I greased them with maple syrup.
I let the cozonas cool on a grill, then wrapped them in a bag.
They were very fragrant, fluffy and delicious.

How to make fasting cake with cocoa and orange flavor

There are also ready-made sweets, most of them imported and all very expensive. The following are some recipes for much cheaper sweets, without sugar and of the type allowed by the doctor.
Ingredients: oatmeal (30 g = 14 carbohydrates), low-fat yogurt 1% fat (100 g = 4 carbohydrates), cocoa (one teaspoon = 1 carbohydrate), powder or liquid sweetener (as indicated on the package leaflet).
Preparation: weigh the oatmeal mix dry with cocoa and sweetener, add the yogurt, mix - possibly with a mixer - and leave for 1/2 hour, until the mixture becomes consistent.
It is served as such. You will have a surprise: the taste is very similar to that of almond cream.
Ingredients: oatmeal (30 g = 14 carbohydrates), skim yogurt 1% fat (75 g = 3 carbohydrates), peel from a grated orange (only the surface layer, otherwise the taste becomes bitter = zero carbohydrates), the juice from a orange (35 g = 5 carbohydrates)
Preparation: weigh the oatmeal mixed in a dry state with cocoa and grated peel, add the yogurt and juice, mix - possibly with a mixer - and leave for 1/2 hour, until the mixture becomes consistent. It is served as such. It has a pleasant, refreshing taste.
Ingredients: oatmeal (15 g = 7 carbohydrates), low cream (40 g = 0 carbohydrates), peel of a lemon (only the surface layer, otherwise the taste becomes bitter = zero carbohydrates), juice of a lemon (10 g = 1 carbohydrate)
It is prepared similarly to orange cream, the taste is refreshing and pleasant, but much different from the classic lemon cream, the one with egg and flour.
You can prepare, also based on oatmeal, creams from any fruit, with the following mentions:
Ingredients: oatmeal (15 g = 7 carbohydrates), low cream (30 g = 0 carbohydrates), fruit pulp crushed by hand or with a mixer: apples, apricots, cherries, blackberries, peaches, raspberries, strawberries, cherries (65 g = about 7 carbohydrates), melon, blueberries, tangerines (40 g = about 4 carbohydrates). Bananas, grapes and plums are not recommended.
Prepare a classic, thin cake top, preferably of the pandispan type, but made of wholemeal flour and without sugar. Instead of sugar, you can use a sweetener that allows baking to a certain temperature and that exists commercially.
It can be syruped, with a sweetener diluted in skim milk, with the addition of artificial flavor. It is not glazed, but it is filled and covered with one of the above creams. It can be decorated with fruit.
Before dosing his slice, the diabetic will calculate the carbohydrate content, as follows: the countertop calculated according to the weight of the white bread, the cream calculated according to the content specified above.
Sugar-free apple jam
Ingredients: well-ripened apples, sweetener.
Preparation: peel the apples, remove the stalk with the seeds, grate them or grind them in a vegetable grinder and boil them with a little water (not much, so as not to become a compote). Boil by chewing, or put in the "bain-marie".
When the liquid has dropped and the paste has acquired a certain consistency, take it off the heat, introduce a sweetener, dosed according to the supplier's instructions, and IMMEDIATELY place it in hot, clean jars, which close with tight lids.

After several attempts to combine different ingredients, I came up with this recipe that seemed by far the best. I used unsweetened almond milk. It is now on sale everywhere and has prices ranging between 6 and 14 lei / liter. But from one liter you make 3 big and fluffy cakes, so it's not a big expense. The pleasant yellow color is given by turmeric (turmeric). It must be dosed sensibly so as not to obtain a yellow-green or fluorescent cake. That's how I managed to prepare the best fasting cake!
